Grilled Zucchini Sticks

Zucchini when cut lengthwise is perfect for grilling on a stick.

  • 4 - 6 small zucchinis, approximately 6” (15cm) long
  • olive oil
  • sea salt
  • pepper
  • 2 limes
  • ¼ cup (15g) chopped parsley

24 wooden skewers


Soak wooden skewers in a bowl of warm water for 30 minutes.

Wash and remove the stem and base from the zucchinis.  Cut each zucchini in half thru the middle then cut each half lengthwise making 4 sticks.  Thread the zucchini sticks onto the skewers and place on a baking sheet.  Drizzle with olive oil and season with salt and pepper.  Cut one lime in half and squeeze the juice over the zucchini.  

Grill over medium high heat for 3 - 4 minutes per side or until zucchini is golden brown and soft.  Cut the second lime in slices and arrange on a platter with the zucchini sticks.  Drizzle with a splash of olive oil. Garnish with chopped parsley.
