Open Faced BLT on Mashed Avocado with a Drizzle of Olio

We have taken avocado toast to a new level by slathering a mashed avocado in place of mayonnaise to create a BLT.

  • 1 bagel or 2 slices of your favorite bread
  • 4 slices cooked bacon
  • 2 lettuce leaves
  • 4 slices tomato, beefsteak or heirloom, cut ¼” (6.5mm) thick
  • 1 avocado, ripe
  • 1 teaspoon (5ml) lemon juice
  • salt & pepper
  • extra virgin olive oil (olio)


Lightly toast a bagel or 2 pieces of your favorite bread.  Cut the avocado in half and remove the pit.  Scoop out the flesh into a small bowl.  Add 1 teaspoon (5ml) of lemon juice and a pinch of salt and pepper.  Mash the avocado with the back of a fork until it is chunky or smooth as desired.  

Divide the avocado mash and spread evenly over the 2 slices of toasted bagel or bread.  Top with lettuce, 2 slices of bacon, 2 tomato slices and drizzle with extra virgin olive oil (olio). Dust with salt and pepper and serve.
