  • pizza dough, store bought or home-made
  • all purpose flour for dusting pizza dough
  • 1 chicken breast, cooked and shredded
  • ¾ cup (78ml) buffalo sauce, see recipe below
  • 2 jalapeno peppers, seeded and thinly sliced
  • 1 bunch fresh chives, finely chopped
  • 1 ball of mozzarella cheese, approximately 1 ½ cups (180g), grated
  • 1 cup (120g) medium cheddar cheese, grated
  • ½ cup (120ml) Ranch dressing

Buffalo Sauce

  • ⅔ cup (160ml) Frank’s Red Hot Sauce
  • ½ cup (115g) butter
  • 2 tablespoons (30ml) apple cider vinegar
  • 1 teaspoon (5ml) smoked paprika
  • ½ teaspoon (2.5ml) garlic powder
  • pinch of cayenne pepper

Preheat the oven to 425°F (220°C).

In a medium mixing bowl add ½ cup (60ml) of buffalo sauce and shredded chicken breast.  Toss to coat and set aside.

Roll out pizza dough on a lightly floured surface, large enough to cover your sheet pan.  Lightly dust the sheet pan with flour and place dough in the pan pushing into the corners and up the sides to form a crust.

Cover the base of the pizza dough with the remainder of buffalo sauce.  Add ½ the mozzarella and cheddar cheese sprinkling over top of the sauce.  Next, top with shredded chicken and the remaining cheese.  Add sliced jalapeno peppers and sprinkle with chives.

Bake for 10-12 minutes or until the crust is golden brown and all the cheese has melted.  Remove the pizza and let cool for a minute or two.  Drizzle with Ranch dressing and serve.

Buffalo Sauce

Add butter to a small saucepan over medium high heat.  Melt butter and add ingredients stirring to blend.  Remove from the heat and whisk to create a smooth sauce.
