Citrus Royal Icing

Makes 2 cups

  • 2 large egg whites
  • 4 cups (500g) sifted confectioner’s sugar
  • 1 lemon, juiced


Beat the egg whites until stiff.  Add sugar one cup  (125g) at a time.   Add lemon juice and beat for 1 additional minute.  If icing is too thick, add another egg white.  If too thin, add more sugar.   Royal Icing may be stored in an airtight container for up to 3 days.

Chef’s Note:  Store bought decorations may be used.
