  • ½ - ¾ cup (120ml - 180ml) lemon Juice, freshly squeezed
  • 1 tablespoon (10g)  lemon zest, grated
  • 1 cup (200g) sugar
  • 2 eggs, beaten
  • 2 tablespoons (30g) butter


Add all ingredients to a medium sized saucepan.  Over low heat, stir all the ingredients till combined.  Continue to cook over low heat until thickened, stirring constantly. The lemon curd will thicken at about 170°F/76°C.  

Remove from heat.  Place mixture in a bowl and cover with plastic wrap, and refrigerate for at least 1 hour to cool before serving.  

Can store in the fridge for 3-5 days.
